Method

  2. Melt the dark chocolate and butter together in a double boiler or microwave, stirring until smooth and glossy. The mixture should be fragrant and smooth to the touch.
  3. In a large bowl, whisk the eggs, sugar, and vanilla extract until the mixture is frothy and slightly lighter in color, about 2 minutes.
  4. Pour the melted chocolate and butter into the egg mixture, stirring gently until fully combined and smooth.
  5. Sift the flour and cocoa powder into the wet mixture, then fold gently with a spatula until just incorporated. The batter should be thick and shiny.
