Ingredients
  

  • 4 cups ripe peaches, pitted and sliced fresh or thawed frozen
  • 1/4 cup fresh basil leaves roughly chopped
  • 1/4 cup honey or agave syrup optional, for sweetness

Method
 

  1. Place the sliced peaches, chopped basil, and honey into the blender.
    4 cups ripe peaches, pitted and sliced, 1/4 cup fresh basil leaves, 1/4 cup honey or agave syrup
  2. Blend on high until the mixture is smooth, with no visible chunks, and smells fragrant.
  3. Pour the blended mixture into a shallow dish or freezer-safe container.
  4. Place the dish in the freezer, and every 30 minutes, stir vigorously with a spatula to break up ice crystals and develop a creamy texture. Repeat this process 3-4 times.
  5. After the final stir, let the mixture freeze completely for another 2-3 hours, until firm but scoopable.
  6. Serve the peach basil icy treat in bowls or cups, garnished with additional basil leaves if desired.

Notes

For a smoother texture, you can process the mixture in a food processor after freezing for a few minutes. Adjust sweetness by adding more honey or agave if desired.
