  • 1.5 pounds ground beef preferably a mix of beef and pork
  • 0.5 pounds ground pork or substitute with more beef
  • 1 cup breadcrumbs panko or crushed crackers
  • 1 large onion finely chopped
  • 3 cloves garlic minced
  • 2 tablespoons Worcestershire sauce adds smoky umami
  • 2 eggs lightly beaten
  • 0.25 cup ketchup or tomato sauce for topping

Method
 

  1. Preheat your oven to 180°C (350°F).
  2. Chop the onion finely and mince the garlic until fragrant and slightly softened.
  3. In a large mixing bowl, combine the ground beef and pork, then add the breadcrumbs, chopped onion, minced garlic, Worcestershire sauce, eggs, and a pinch of salt and pepper.
  4. Use your hands or a spoon to mix everything thoroughly until well combined and the mixture feels cohesive.
  5. Shape the mixture into a rustic loaf on a parchment-lined baking sheet, pressing gently to form a slightly uneven shape that encourages a crusty exterior.
  6. Spread a layer of ketchup or tomato sauce over the top of the loaf for a sweet, tangy glaze.
  7. Bake in the preheated oven for about 45 minutes, or until the crust is golden and crispy, and the internal temperature reaches 71°C (160°F).
  8. Once baked, remove from the oven and let it rest for at least 10 minutes to allow the juices to settle.
  9. Slice the meatloaf into thick, rustic pieces, revealing the juicy, slightly crumbly interior with a crisp top.
