  • 2 tablespoons olive oil good quality extra virgin
  • 2 cloves garlic minced
  • 1 large lemon zest and juice
  • 1 teaspoon fresh thyme or rosemary chopped, optional

Method
 

  1. Pat the chicken thighs dry with paper towels to ensure crispy skin. Season generously with salt and pepper on both sides.
  2. In a small bowl, whisk together the juice and zest of the lemon, minced garlic, olive oil, chopped herbs, and a pinch of salt. Marinate the chicken in this mixture for at least 15 minutes in the fridge.
  3. Heat your heavy skillet over medium-high heat until hot and shimmering. Carefully place the chicken thighs skin-side down and sear for about 5-7 minutes, pressing gently to ensure contact. The skin should turn golden brown and crispy with a sizzle sound.
  4. Flip the chicken thighs using tongs and continue cooking on the other side for another 8-10 minutes. Reduce the heat slightly if the skin starts to burn, and baste occasionally with pan juices to keep the meat moist. The skin should be deeply golden and crispy.
  5. Check the internal temperature with a meat thermometer; it should read 75°C (165°F). Once done, transfer the chicken to a plate and let it rest for 5 minutes to allow juices to redistribute.
  6. Spoon the pan juices over the rested chicken and squeeze fresh lemon wedges on top for an extra burst of brightness. Serve immediately, enjoying the crispy skin and tender, flavorful meat.
