  1. Grate the cheese using a grater until you have about a cup of shredded cheese ready for melting.
  2. Heat a non-stick skillet over medium heat and add a tablespoon of oil, allowing it to warm up until it shimmers softly.
  3. Lay a tortilla flat in the skillet, pressing gently to ensure contact with the hot surface, and sprinkle about a quarter of the shredded cheese evenly over one half of the tortilla.
  4. Add your chosen spooky fillings—black beans and chopped jalapeños—over the cheese, spreading them out evenly to prevent overstuffing.
  5. Sprinkle a pinch of cumin, smoked paprika, and chili powder over the fillings for smoky depth and a hint of spice.
  6. Cover the fillings with another tortilla and press down gently, then cook for about 3-4 minutes until the bottom is golden brown and crispy, with cheese beginning to melt.
  7. Carefully flip the quesadilla using a spatula and cook the other side for another 3-4 minutes until golden and crispy, with bubbling melted cheese visible.
  8. Remove the quesadilla from the skillet and let it rest for a minute to allow the cheese to set slightly, making it easier to cut.
  9. Use a knife to cut the quesadilla into wedges, revealing the melty cheese and vibrant fillings inside.
