Eyeball Caprese Bites

These Eyeball Caprese Bites are mini appetizers made by stacking fresh mozzarella and cherry tomatoes, then decorating with a red pesto vein to mimic an eyeball. The assembly involves piercing and arranging the ingredients to resemble creepy, colorful eyeballs, with a smooth mozzarella base and vibrant red accents, resulting in a playful, bite-sized presentation.

Ingredients

  • 16 pieces mini fresh mozzarella balls kept chilled before assembly
  • 16 pieces cherry tomatoes preferably red, for colorful effect
  • ½ cup red pesto for veiny iris decoration
  • optional black salt or black pepper for addition to enhance shadows

Equipment

  • Toothpicks or Small Skewers
  • Serving Plate
  • Small Spoon or Squeeze Bottle

Method

  1. Arrange the chilled mozzarella balls and cherry tomatoes on a platter nearby your workspace for easy assembly.
  2. Insert a toothpick or small skewer through a mozzarella ball, then thread a cherry tomato onto the same toothpick, creating a caprese stack.
  3. Place the assembled eyeball on the serving plate, repeating with remaining ingredients until all bites are assembled.
  4. Use a small spoon or squeeze bottle to carefully draw thin red pesto lines around the cherry tomato, creating bloodshot veins for a creepy eyeball effect.
  5. If desired, sprinkle a little black salt or black pepper around the edges for added shadowy depth and a more intense eyeball look.
  6. Serve immediately on a platter or small dish, making sure each eyeball is visually striking and ready for spooky snacking.

Notes

Chilling the mozzarella beforehand helps it hold its shape. Use a fine tip squeeze bottle for precise veiny decoration, and keep the bites refrigerated if not serving immediately to maintain freshness.
