Ingredients

  • 4 large eggs fresh, room temperature
  • 1 cup cottage cheese full-fat preferred
  • 1 cup shredded cheese cheddar, mozzarella, or your choice
  • 2 tablespoons fresh herbs chopped parsley or chives
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil or butter for greasing the dish

Equipment

  • Oven
  • 20cm (8-inch) baking dish
  • Mixing bowl
  • Whisk
  • Spatula
  • Measuring cups and spoons

Method

  1. Preheat your oven to 180°C (350°F). Lightly grease the baking dish with olive oil or butter, ensuring the bottom and sides are coated for easy removal.
  2. Crack the eggs into a large mixing bowl and whisk thoroughly until the whites and yolks are fully combined and the mixture appears smooth and slightly frothy, about 30 seconds.
  3. Add the cottage cheese to the eggs and gently fold in with a spatula until the mixture is creamy and evenly combined. This creates a tender, slightly tangy base.
  4. Stir in the shredded cheese, chopped herbs, salt, and pepper. Mix gently to distribute the seasonings evenly without deflating the mixture.
  5. Pour the mixture into the prepared baking dish, spreading it out evenly with a spatula. The batter should be smooth and level.
  6. Place the dish in the oven and bake for 25–30 minutes. You'll notice the edges turning golden brown and the top bubbling as the bake cooks through.
  7. Check for doneness by inserting a knife or toothpick into the center—if it comes out clean and the top is lightly golden, it's ready. The edges should be crispy, and the center just set but still slightly jiggly.
  8. Remove the bake from the oven and let it rest for 5 minutes. This helps the dish set further and makes slicing easier.
  9. Slice into portions using a sharp knife, then serve warm, garnished with extra herbs if desired. Enjoy this cozy, protein-packed breakfast!
